EMPLOYMENT:

Buffalo Wings & Rings(BWR), Columbus, OH. From 01/08 to 05/09. Kitchen Manager. Responsible for the daily operations of the kitchen, including management of the kitchen staff (approximately 30 people). Scheduling and training of the staff. Ensure that all recipes, food preparation, and food presentation meet restaurant quality specifications, while maintaining a safe, orderly, and sanitized kitchen area. Controlling food and labor cost. I reduced food cost from 41% to 34% in four weeks. I maintained 12% to 13% scheduled labor per week.

Kitchen Manager duties include, but not limited to, handling work and personnel problems as needed, direct supervision of cooks, prep personnel and dishwashers. I managed staffing levels throughout shift to meet hourly labor cost to sales ratio, minimized food waste, performed maintenance and upkeep of equipment. Training new kitchen staff using corporate guidelines, equipment operations, cleaning procedures and specification procedures, recipe guidelines and enforce recipe compliance. I also maintained par lists for food orders, entered employee information into computer, handled employee discipline and termination. I made physical counts of inventory on hand, food/produce/drinks/chemicals/linens and place vendor orders for items needed. Managed receipt of truck orders and proper storage of items when received. Post food and beverage invoices and non food bills into computer system, meet with vendors as needed and maintain a good working relationship with each vendor.

Shift Manager for BWR, I was responsible for the training and managing of all team members to display hospitality skills. I provided backup to the team member staff during busy times or when they were short staffed. I resolved guest problems and complaints to ensure positive guest experiences at the restaurant. I was responsible for educating all team members to the importance of communication success with our guests. I was responsible for providing leadership to other team members in the restaurant by displaying resourcefulness, self-starting work habits, and creativity with problem solving. I conducted performance reviews for all back of house team members, held shift briefings, focused on teamwork and building camaraderie to support the company’s mission.

During my shift hours I was responsible to maintain labor efficiency ratios to ensure guest service and cost effectiveness by adding associates during peak hours or cutting associates during lull periods. I was responsible for restaurant P&L performance reports, which fluctuated up or down for daily/weekly business. I oversaw the restaurant administrative requirements including cash handling, conducting shift safe audits, following the safety & security practices in accordance with BWR standards. I used their Microsoft software programs (Word and Excel), I recorded all financial transactions, cash/credit received, managed accounts payable expenses, and running the trial balance at the end of the shift for closing. I correctly posted general ledger transactions. I ensured all reports, documentation, and other information required by the company were submitted in a timely and accurate manner. I also coordinated miscellaneous projects as needed or as directed by the General Manager.

Papa Murphy’s, Columbus, OH. From 01/07 to 01/08. Manager In Training (MIT). Prepared dough, vegetables, pizza’s and sauces. Inventory adjustments on waste; inventory of produce; weekly food orders; prep list; dough calculation and adjustments; shift management duties; customer service; and cash register.

The following warehouse positions were through Excel Staffing Agency 12/99 through 02/01, ending as the contracts were fulfilled.

1) Elmer’s Glue Warehouse, Columbus, OH. Shift Supervisor. I was responsible for creating bill of lading for delivery, managing picking of products for shipping, stocking of received products, and stock transfer. I supervised 8 to 10 employees and the writing of weekly reports.

2) Medline, Columbus, OH. Shipping Supervisor. I was responsible for pulling of product from shelves, locating misplaced products through computer use, shipping of supplies, and quality control.

3) Allegiance Hospital Supplies, Columbus, OH. Picker/Packer. I picked orders using the RF system and placed them at the dock to be packed and loaded. I was responsible for the labeling of products to be shipped and manifesting invoices.

H. H. Gregg, Inc. Columbus, OH. From 5/99 to 10/99 Assistant Supervisor/Supervisor in Training. I utilized the computer to gather data for 2nd shift pulling product for next day delivery. I checked in delivery teams, returned products, and updated delivery schedules daily. I performed customer service assistance; quality and inventory control; minor maintenance of products; and problem solving.
